Faroe Island Salmon with Brown Butter Citrus Glaze

🐟 Ingredients

For the Salmon:

  • 2 Faroe Island salmon fillets (6 oz each, skin on)
  • Salt and pepper
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 clove garlic, minced
  • Zest of 1 orange + 2 tbsp fresh orange juice
  • 1 tbsp lemon juice
  • 1 tsp honey or maple syrup (optional for sweetness)
  • 1 tsp Dijon mustard

For the Herbed Quinoa:

  • ½ cup quinoa
  • 1 cup water or low-sodium vegetable/chicken broth
  • 1 tbsp olive oil or butter
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped chives or scallions
  • Salt to taste

For the Roasted Asparagus:

  • 1 bunch thin asparagus, trimmed
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper
  • Optional: grated Parmesan or lemon zest for finish

🔪 Instructions

  1. Cook the Quinoa:
    • Rinse quinoa thoroughly.
    • In a pot, combine quinoa and broth (or water) with a pinch of salt. Bring to boil, reduce to low, cover and simmer for 15 minutes. Let sit 5 minutes, fluff with fork.
    • Stir in olive oil or butter, parsley, and chives.
  2. Roast the Asparagus:
    • Preheat oven to 425°F (220°C).
    • Toss asparagus with olive oil, salt, and pepper. Roast on a sheet pan for 12–15 minutes until tender and slightly crisp.
    • Optional: Sprinkle with grated Parmesan or lemon zest after roasting.
  3. Sear the Salmon:
    • Pat salmon dry, season with salt and pepper.
    • Heat olive oil in a non-stick or stainless pan over medium-high.
    • Place salmon skin-side down, press gently for even sear. Cook 4–5 minutes, flip, cook 2–3 minutes more. Remove from pan and tent loosely.
  4. Make the Brown Butter Citrus Glaze:
    • In same pan, lower heat to medium. Add butter and let it melt and brown (nutty aroma, golden color).
    • Add garlic, orange zest, orange juice, lemon juice, Dijon, and honey. Stir and simmer for 1–2 minutes until slightly thickened.
  5. To Serve:
    • Spoon herbed quinoa onto plates. Place salmon fillet on top.
    • Drizzle brown butter citrus glaze over salmon.
    • Serve asparagus on the side.
