Grilled Vietnamese Spiny Lobster with Spicy Scallion Sauce – Coastal Seafood Delight

🦞 Grilled Vietnamese Spicy Scallion Spiny Lobster
📝 Ingredients:
- 🦞 2 local spiny lobsters, split in half lengthwise
- 🌿 Scallion Oil:
- 🫒 ½ cup avocado oil
- 🧅 5 scallions/green onions, thinly sliced
- 🌶️ 1 tablespoon Wynn’s Kitchen Sate Sauce
- 🐟 1 teaspoon fish sauce
- 🧂 Salt and pepper
🔥 Instructions:
- Preheat the grill to medium-high heat ♨️.
- Make the Scallion Oil 🧄:
- Heat the oil in a small saucepan over medium heat 🍳.
- Add scallions — as soon as they start to bloom (get fragrant), turn off the heat ❌🔥.
- Stir in fish sauce 🐟, sate sauce 🌶️, and a dash of salt 🧂.
- Transfer to a bowl 🥣 and let it cool 🌬️.
- Prepare the Lobsters 🦞:
- Split lobsters in half lengthwise 🔪.
- Pat dry with a paper towel and season the flesh with salt and pepper 🧂.
- Grill Time ⏱️:
- Brush lobster meat with scallion oil 🖌️🌿.
- Place lobster halves flesh-side down on the grill and cook for 3 minutes 🔥.
- Flip to shell-side down, brush generously with more scallion oil, and grill for another 4–6 minutes until the meat is opaque ✅.
- Finish & Serve 🍽️:
- Remove from heat, drizzle on more scallion oil 🌿🫒, and squeeze fresh lime over the top 🍋.
- Serve immediately and enjoy!
💡 Tip:
Scallion oil can be made ahead!
- Store at room temperature for up to 3 days 🧊.
- Or keep it refrigerated for up to 2 weeks ❄️.
- If chilled, bring to room temperature before using 🌡️.
