If you’ve been searching for fresh California halibut, Baja halibut, or sustainable wild-caught halibut near you, this week’s Featured Fish of the Week at Catalina Offshore Products is one you don’t want to miss.

Halibut is one of those fish people come back for again and again. It’s clean tasting, versatile, and proudly wild-caught from the Pacific. But customers often ask us:

What’s the difference between California halibut and Baja halibut? Is it sustainable? When is it in season? And how should I cook it?

Let’s walk through it in plain terms.

California Halibut – A True West Coast Favorite

California Halibut (Paralichthys californicus) is native to the Pacific Coast, ranging from Washington down through Southern California and into Northern Baja.

Where Is California Halibut Caught?

Most California halibut is:

  • Wild-caught off the Southern California coast
  • Harvested from sandy ocean bottoms, bays, and near kelp beds
  • Caught by hook-and-line or small boat commercial fisheries

It’s a local fish with strong West Coast roots.

Wild or Farmed?

California halibut is almost entirely wild-caught. Unlike many white fish in the market, it is not commonly farm-raised. When you buy fresh halibut from Catalina Offshore Products, you’re getting wild Pacific fish.

Is It Seasonal?

Yes. Peak California halibut season typically runs from spring through early fall. Warmer water brings them into shallower coastal areas, which improves availability and quality.

How Abundant Is It?

California halibut fisheries operate under strict U.S. management practices, including:

  • Catch limits
  • Minimum size requirements
  • Seasonal closures
  • Ongoing stock assessments

Under U.S. fishing regulations, California halibut is considered a responsibly managed and sustainable seafood choice, helping prevent overfishing and protect long-term populations.

Baja Halibut – Same Quality, Different Waters

Baja halibut comes from the coastal waters of Baja California, Mexico, often just south of U.S. fishing zones.

In many cases, it is the same species or a closely related halibut, simply harvested farther south.

Where Is Baja Halibut Fished?

  • Pacific waters off Baja California
  • Nearshore sandy bottoms
  • Coastal commercial fisheries

Wild or Farmed?

Like its California counterpart, Baja halibut is wild-caught, not farmed.

Is It Seasonal?

Baja’s slightly warmer waters can extend availability a bit longer than Northern waters, helping maintain steady supply during seasonal transitions.

Sustainability

When responsibly sourced, Baja halibut can also be a sustainable seafood option. At Catalina Offshore Products, we work with trusted suppliers who follow responsible harvesting practices that align with preventing overfishing and protecting marine ecosystems.

California vs. Baja Halibut – What’s the Real Difference?

For most customers, the difference comes down to origin and fishery management, not flavor.

FeatureCalifornia HalibutBaja Halibut
OriginU.S. Pacific CoastBaja California waters
ManagementU.S. regulated fisheriesMexican regulated fisheries
SeasonSpring–Early Fall peakOften slightly extended
Taste & TextureMild, firm, leanMild, similar texture

In the kitchen, most people won’t taste a major difference. Both offer the same clean flavor and beautiful white fillet that halibut lovers expect.

What Does Halibut Taste Like?

If you’ve never tried halibut, here’s what to expect:

  • Mild, clean flavor
  • Slight natural sweetness
  • Firm yet tender white flesh
  • Large flakes when cooked
  • Low oil content

It’s less buttery than sea bass and firmer than cod. Compared to tilapia, halibut has a cleaner, more premium flavor and texture. Compared to salmon, it’s leaner and lighter.

That balance is exactly why customers love buying fresh halibut from Catalina Offshore Products. It works for almost everyone at the table.

Best Ways to Cook California and Baja Halibut

Halibut is versatile, but because it’s lean, simple cooking is best.

Pan-Seared Halibut

A hot pan, olive oil, salt, and pepper. Finish with lemon and fresh herbs. The outside crisps slightly while the inside stays tender.

Grilled Halibut

Brush lightly with oil and grill over medium heat. Pair with citrus salsa or herb butter.

Baked Halibut with White Wine

Garlic, capers, and a splash of dry white wine. Roast until just flaky. It’s light but satisfying.

Halibut Tacos

Grilled halibut, shredded cabbage, lime crema, fresh salsa. Clean and bright.

Best Pairings

  • Sauvignon Blanc
  • Chardonnay
  • Fresh dill, parsley, or basil
  • Grilled vegetables
  • Citrus-based sauces

Why Halibut Is One of the Most Popular Wild-Caught Fish

People love halibut because it checks all the boxes:

  • Wild-caught Pacific fish
  • Mild flavor for the whole family
  • Lean, high-quality protein
  • Sustainable under U.S. fishing practices
  • Versatile for grilling, baking, or searing

When customers search for sustainable halibut delivery, fresh Pacific halibut online, or wild-caught halibut near me, they’re usually looking for a fish that’s dependable, healthy, and responsibly sourced.

That’s exactly what we provide.

At Catalina Offshore Products, we take sustainable seafood seriously.

We support:

  • Responsible fishing practices

Why Faroe Island Salmon Is the World’s Best Salmon: Origin, Benefits, and How to Cook It to Perfection https://catalinaop.com/why-faroe-island-salmon-is-the-worlds-best-salmon-origin-benefits-and-how-to-cook-it-to-perfection/ Tue, 26 Aug 2025 19:41:47 +0000 https://catalinaop.com/?p=470853 Faroe Island Salmon

Faroe Island Salmon is making waves—literally and figuratively—in kitchens, high-end restaurants, and premium grocery shelves across the world. But what makes this salmon so extraordinary compared to its counterparts from Norway, Scotland, Canada, or Alaska?

Let’s dive deep into why Faroe Island Salmon is regarded as the gold standard of salmon, how it’s raised, why it’s better for your health, what makes it uniquely flavorful, and how to prepare it like a gourmet chef.

🌍 Where Does Faroe Island Salmon Come From?

The Faroe Islands, located in the North Atlantic between Iceland and Norway, are a remote, pristine archipelago known for their untouched landscapes, cold waters, and sustainable fishing culture.

These islands are not just picturesque—they’re strategically perfect for raising world-class salmon. The ocean currents are strong, temperatures are stable year-round, and the waters are exceptionally clean and oxygen-rich.

🐟 How Is Faroe Island Salmon Farmed?

Unlike mass-market salmon farming operations, Faroe Island salmon farming is small-scale, sustainable, and humane. The salmon are raised in spacious sea pens in their natural oceanic habitat, with no antibiotics or growth hormones used at any point.

Farmers in the Faroe Islands follow some of the strictest aquaculture standards in the world, including:

  • Low stocking densities (plenty of room for the salmon to swim)
  • Natural feeding cycles
  • Voluntary adherence to GlobalG.A.P. certification
  • Eco-friendly practices that maintain the ecosystem’s integrity

This results in fish that are not only healthier and less stressed but also more flavorful and nutritionally superior.

🌊 What Makes Faroe Island Waters So Special?

Water quality is everything when it comes to fish farming. The Faroe Islands are blessed with:

✅ Cold, clear North Atlantic water
✅ Continuous oceanic current that mimics the salmon’s natural environment
✅ High oxygen levels, which support muscle growth and a cleaner taste
✅ Zero freshwater contact, reducing the risk of parasites and disease

These conditions create exceptionally firm, bright-orange salmon fillets with fine marbling and a buttery texture that melts in your mouth.

🍴 Why Do Chefs & Foodies Love It?

Faroe Island Salmon is favored by Michelin-starred chefs, sushi masters, and wellness enthusiasts alike because of:

  • 🧈 Rich, velvety texture
  • 🎣 Consistent quality and flavor year-round
  • 🐚 No “fishy” smell or aftertaste
  • 🍽 Versatility: perfect for grilling, roasting, sushi, and smoking
  • 🌱 High in omega-3s without the heavy metals or toxins

🧬 Nutrition Benefits of Faroe Island Salmon

Faroe Island Salmon isn’t just delicious—it’s a nutritional powerhouse. Just a 3.5 oz (100g) serving contains:

  • ~2,200 mg Omega-3 Fatty Acids (EPA & DHA)
  • 22–25g of high-quality protein

Frequently Asked Questions https://catalinaop.com/faqs/ Wed, 13 Aug 2025 06:27:41 +0000 https://catalinaop.com/?page_id=470618 GENERAL
Why does the price differ online vs the retail fish market?

Online-Only Pricing Notice. Prices listed on catalinaop.com apply to online orders only and may differ from retail prices at our physical San Diego fish market. Online pricing reflects the added costs involved in nationwide seafood delivery — including insulated packaging, dry ice or gel packs, shipping carrier fees, insurance, and overall logistics to maintain food safety and quality during transit. In-store purchases do not include these shipping-related expenses. For current in-store prices, please call or visit our market.

What kind of seafood do you sell?

We’re strategically situated between San Diego’s local waterfront and Baja California. This enables us to provide you with a variety of wild caught and farmed seafood from the Pacific West Coast, the Pacific side of the Baja peninsula and the Gulf of California. Our ever-evolving bounty of fresh and frozen seafood includes tuna, opah, swordfish, grouper, yellowtail, halibut, snapper, sea bass, rockfish, sea urchin, shrimp, spot prawns, spiny lobster, abalone, and much more!

Why do you sell farmed fish?

More than three billion people depend on seafood as their primary source of protein. Wild-capture seafood harvests have leveled off and cannot meet the growing seafood demand alone. Consumer demand for healthy fish AND sustainable practices has resulted in many delicious, environmentally responsible farmed seafood choices, including several selections we offer.

What do terms like Proton Frozen or IQF mean?

The faster you freeze your food the better the quality. When food is frozen slowly, ice crystals form. Big ice crystals typically dry out the food and impact the overall taste and flavor.

Proton freezing is a more recent quick-freeze technology that combines evenly distributed electromagnetic waves and cold air to reduce ice crystal formation and cell membrane damage. As a result, taste and texture are preserved naturally, without any additives or chemicals.

IQF, or individually quick frozen, is a common freezing method in the foodservice industry and consists of freezing individual pieces of food separately from the other pieces at extremely low temperatures. IQF is also referred to as flash freezing, quick freeze, or super freeze.

Where are you located?

We are located in the famed coastal town of San Diego, CA, otherwise known as America’s Finest City!

Do you have a physical storefront?

Yes! In addition to our online store, we have a walk-in fish market:

  • 5202 Lovelock Street, San Diego, CA, 92110
  • Open Tuesday-Friday 10AM-5PM and Saturday and Sunday 10AM-3PM
  • For changes to our operating hours due to holidays or other factors please refer to Google, Yelp, or our other social platforms.

When will I receive my order?

You may select a delivery date up to three days out from your order, excluding blackout dates (Sundays, Mondays, and holidays). If you are unable to select a preferred delivery date at check out, it is due to one of the following reasons:

    • it is outside of the three-day window;
    • it is a Sunday or Monday;
    • it is a holiday or the day after a holiday;
    • your zip code does not qualify for Saturday delivery.
Can my order arrive on a Saturday?

Saturday delivery is an option for an additional charge; however, some zip codes do not allow for Saturday delivery. How is my order packaged? How does it stay cold?

Your seafood arrives in insulated packaging with gel ice packs and/or dry ice to withstand 24-48 hours in transit (depending on the final destination). Handle dry ice with care and avoid direct contact with skin. Feel free to reuse the gel packs! Dry ice is not permitted if shipping to Hawaii.

How long can my seafood sit on my porch and still stay cold / frozen?

We pack your seafood with gel ice packs and/or dry ice to withstand 24-48 hours in transit but recommend transferring products to your refrigerator or freezer as soon as they arrive to maintain optimal quality. If you live in a hotter climate, we advise planning a delivery date when you know you will home or can get home shortly after tracking indicates your shipment has been delivered.

The packaging on my frozen product is cracked / unsealed. Is the product still safe to eat?

We pack your seafood with gel ice packs and/or dry ice to withstand 24-48 hours in transit but recommend transferring products to your refrigerator or freezer as soon as they arrive to maintain optimal quality. If you live in a hotter climate, we advise planning a delivery date when you know you will home or can get home shortly after tracking indicates your shipment has been delivered.

Upon delivery, if you notice a fish portion has a broken vacuum seal and the fish appears in good condition, we suggest eating it as soon as possible. Alternatively you can repackage it by wrapping it tightly in saran wrap and storing in your freezer until you’re ready to enjoy. Unfortunately, we cannot issue refunds for broken vacuum seals after 48 hours upon delivery. See our return policy in our FAQ.

Do I have to be home to get my package?

You do not have to be home for delivery and signature is not required unless you require it. We do not assume responsibility for failed delivery attempts due to a lack of signature or lack of special instructions. For example, if you live in a gated apartment building and packages must be left in a designated area, it is your responsibility to include notes on your order.

Do I need an account to place an order?

You may check out as a guest and do not need to set up an account. However, creating an account will help you check out faster in the future.

What is the cut-time to place an order for next day delivery?

Our cut-off time to place an order for next day delivery is 12PM PST.

Can I modify my order after it is placed?

It depends on availability of product and whether your original order has already been processed in our system. To request a modification to your order, please contact our online ordering department at help@catalinaop.com.

How do I track my order?

Once your order has been shipped, you should receive an email with tracking info for your order. If you feel you placed your order successfully but did not receive tracking, please contact our online ordering department at help@catalinaop.com.

    What is your return policy?

Due to the nature of the products we sell, we do not accept returns or provide exchanges. Once you take delivery of your shipment, it is your responsibility to properly store your seafood and/or consume it within recommend timeframes.

Should you experience an issue with your order, we’ll do what we can to make it right with the following things in mind:

    Missing Items

Upon delivery, be sure to check that all items were received. Look under all packing materials, including gel ice packs and smaller food items, to avoid accidentally discarding an item with your box. Missing items must be reported within 24 hours of delivery.

    Damaged Items
To be considered for  refund, any damaged item must be reported with photos within 24 hours of delivery.
Occasionally with frozen seafood items, the seal on a vacuum package can pop during transit.  This does not necessarily affect the quality of the fish nor does a popped seal automatically result in a refund. In most cases the fish is still perfectly frozen and safe to consume. Should you come across a broken seal, please contact us within 24 hours of delivery and we’ll help you assess the condition of the fish. After 24 hours we can no longer consider a broken vacuum seal a valid reason for refund. To avoid a vacuum seal breaking while being stored in your home freezer, be sure to handle frozen seafood with care.

    Fresh Seafood
We recommend consuming fresh product within 1-2 days of receiving it. If for any reason you are dissatisfied with the quality of a fresh seafood item, please contact us within this time frame.

    Proton / Super Frozen Tuna
Any issue with our frozen wild or farmed bluefin loin or toro, or wild ahi, must be reported within 7 days of delivery to be eligible for refund! Tuna naturally turns brown once exposed to air or when stored in a traditional freezer. Proton / Super freezing technology slows this process but does not prevent it. For best results, we recommend placing proton frozen tuna in the coldest part of your freezer and storing for no more than 5-7 days. (Find additional info in our FAQ under the “General” and “Sashimi, Sushi & Raw Shellfish” sections.)

Other frozen seafood and dry goods
If for any reason you are dissatisfied with the quality of a frozen seafood item (excluding aforementioned Proton / Super frozen tuna) or dry good, please contact us within 15 days to be eligible for refund.

    Shipping Considerations
Although we ship overnight for next day delivery, transit delays may occur that are out of our control. It is for this reason that we ship our fresh and frozen products in insulated packaging with gel ice and/or dry ice to withstand 24-48 hours in transit (depending on the final destination). Sometimes products that were purchased and shipped frozen do not arrive solidly frozen. As long as they feel cold to the touch, slightly thawed sealed portions may be safely refrozen and consumed with no noticeable loss of quality or nutritional value. Requests for refunds on shipments that were delayed but delivered within 48 hours will be considered on a case-by-case basis. Orders delayed over 48 hours may be considered for reshipment or refund.

UPS and Catalina Offshore assume no liability for loss, damage, delay, misdelivery or nondelivery due to causes beyond either party’s reasonable control (aka “Acts of God”)

What if there is an issue with my order?

Please first review our return policy in our FAQ, then contact our online ordering department at help@catalinaop.com. To expedite resolution, include your order number, as many details as possible about your issue, and applicable photos or video.

We do our best to respond to emails within the same business day or by the next. We are not in the office on Saturday or Sunday, therefore any inquiries emailed over a weekend will be responded to on the following Monday.

I am looking for a specific product, but do not see it on the site. Can you get it?

We’re always open to suggestions for new products and happy to answer questions about out-of-stock or previously cataloged products! Feel free to contact us at help@catalinaop.com.

Why are some products not available at times?

Occasionally, you will find one or more of our seafood selections out of stock. This can be due to several factors including seasonal availability, weather conditions which can greatly impact availability, and/or demand exceeding supply.

Can I send an order as a gift?

Of course! When you check out, update the shipping address with your recipient’s address.

Not sure what type of fish they like? A Catalina Offshore Products Gift Card makes the perfect gift for your seafoodie! Simply choose a dollar amount, add your message, and a digital Gift Card will be emailed directly to your recipient for easy ordering anytime.

    GENERAL SEAFOOD TIPS

What should I do if my live sea urchin, lobster, spot prawns, etc. perish during transit?

We ship our live products alive, but do not guarantee they will be alive upon delivery.

If a live urchin perishes during transit, it is still completely fresh and perfectly safe to enjoy within the same day.

Spot prawns that perish during transit will also be fresh and safe for raw consumption within the same day. However, once spot prawns are no longer alive, they begin to lose their ideal texture. If you are not able to consume your spot prawns the same day you receive them, we recommend boiling or pan searing them for later use. Be sure to cool first before storing in the refrigerator.

Should your lobster appear to have perished in transit, we advise you to cook it the same day you receive it. To tell the difference between a dead lobster or one that is sluggish after being shipped, gently touch the lobster’s eye, and see if it moves. If your lobster is alive upon delivery, we recommend consuming it same day; however, it may keep in the refrigerator for one more day. Place on a baking tray and cover with a damp cloth.

My fish arrived partially thawed; can I refreeze it?

We ship our frozen products in insulated packaging with gel ice and/or dry ice to withstand up to 48-hours transit. Sometimes products that were purchased frozen do not arrive solidly frozen. As long as they are cold to the touch, slightly thawed sealed portions may be safely refrozen with no perceptible loss of quality or nutritional value.

How should I cook my fish?

A good rule of thumb when cooking in a pan or on the grill is to cook fish for 10 minutes per one inch of thickness. That’s about 4-5 minutes on one side and 4-5 on the other.

For sushi grade tuna, we recommend cooking about 1-2 minutes per side to keep a beautiful rare to medium-rare red center.

How long can I keep my fresh seafood before eating it?

Fresh products should be refrigerated or frozen upon receipt. When stored properly in the refrigerator, fresh fish may be cooked within two days from date of purchase. If you do not intend to eat your fresh fish within a day or two, we recommend freezing it.

Live shellfish should be consumed within 24 hours. In the meantime, store in your refrigerator on a baking tray or in a bowl covered with a damp cloth. (See our FAQ for more info on what to do if your live shellfish perishes during transit.)

How long can I keep my frozen seafood before eating it?

With exception of our Proton frozen tuna, most of our frozen items may be stored in the coldest part of a traditional freezer for up to 6 months without sacrificing quality. Certain species, like tuna, naturally turn brown once exposed to air or if stored in a traditional freezer. Proton freezing technology slows this process but does not prevent it. For best results, Proton Frozen tuna should be placed in the coldest part of your freezer and stored for no more than 7 days.

How should I properly defrost frozen fish and other seafood such as shrimp or scallops?

The safest way to defrost your frozen fish is overnight in the refrigerator.

Alternatively, you can thaw it by removing from any packaging and placing it in a plastic bag in a large bowl of water that’s cooler than room temperature. Use a smaller bowl or a weighted plate to keep it submerged so that all parts defrost at the same rate. Using this method, most fish will thaw within 30 minutes. Pat dry with paper towels before cooking or serving raw (if sushi grade).

Once fully thawed, do not refreeze. Consume within 1-2 days of defrosting.

Can I defrost seafood in the microwave?

Please don’t use a microwave to defrost fish! Microwaving alters the texture of fish and shellfish and may partially cook it, further affecting its quality and flavor.

    SUSHI, SASHIMI & RAW SHELLFISH

    What does “sushi grade” mean?

“Sushi grade” or “sashimi-grade” are common terms used to identify seafood considered “safe to consume raw.” Because there is no official, regulated standard for these terms, it’s important that you purchase sushi grade seafood from a trusted seafood source such as Catalina Offshore Products.

Does sushi grade fish have to be frozen to be enjoyed raw?

Generally, any wild fish except for tuna—bigeye, yellowfin, bluefin, etc—should be frozen for specific periods of time at specific temperatures to destroy parasites. Some farmed fish should also be frozen before consuming raw.

There are exceptions, including our farmed Mt. Cook SAIKOU Alpine Salmon, which is raised in parasite-free glacier water. To make it easy for you, our fresh or frozen products that are safe to be consumed raw are clearly specified as “sushi grade” and/or “sashimi grade” on product pages.

Is it okay to eat raw shellfish?

Shellfish, including spot prawns and oysters, do not need to be frozen to be enjoyed raw. However, the FDA cautions that consuming any raw or undercooked seafood or shellfish may increase your risk of foodborne illness, especially if you have certain medical conditions.

For best color, taste, and texture, how should I defrost my sushi grade tuna loin or toro?

Tuna naturally turns brown when exposed to air (unless it has been gas-treated). To maintain its best color and texture, we recommend the following:

    1. Grab a large bowl, salt, plastic food wrap and cheesecloth or kitchen paper (you may substitute paper towel, but it may stick to product).
    2. Fill bowl with lukewarm water and add salt at a rate of 2 teaspoons per liter of water. Remove tuna from any packaging and gently rinse with cold water then immerse in saltwater solution for 3-5 minutes, depending on size.
    3. Remove from saltwater and gently rinse with cold water. Gently remove excess moisture by wrapping tuna in cheesecloth or kitchen paper and then in plastic food wrap.
    4. Use care to ensure the product is not wrapped too tightly as it is necessary to allow the product to “breathe” to achieve appropriate color. Plastic food wrap should not come in direct contact with the product. Refrigerate 3-5 hours, depending on size.
    5. Once tuna is fully thawed do not refreeze. Consume within 1-2 days of defrosting.

Poke, which means “to cut into pieces,” is as culturally significant to Hawaii as hamburgers are to the mainland. Dating back to the islands’ first Polynesian settlers, the dish combined chunks of reef fish, seaweed, kukui nuts and salt. Although Ahi eventually replaced reef fish as modern fishing techniques emerged, today’s many variations of poke feature salmon, scallops, shrimp & more.

From Chilean farmed salmon, these poke pieces offer a firm yet buttery texture, wonderful flavor and great fat content. They are pre-cut and individually quick-frozen (IQF) before being vacuum sealed in 1-lb packs. This Atlantic salmon is responsibly farmed by Marine Harvest in the clear, cold waters of British Columbia. A wonderful choice for your sashimi and sake sushi, it is high quality, free of steroids and hormones, and delightfully fatty. It’s also a rich source of Omega 3s. Fresh fish come into our facility whole, and we then hand cut, Proton Freeze, and vacuum pack our portions. The expedient, deep-freeze technology of the Proton Freeze ensures the salmon is safe to enjoy raw and also preserves its just-cut quality.

    Fillets are skin off.

    Sustainability

Marine Harvest Canada farms Atlantic salmon using an integrated system of brood stock selection, freshwater hatcheries, saltwater farms and state-of-the-art processing plant. Its select ocean sites are located in deep, remote bays where strong ocean currents and cold, oxygen rich water abound. These are ideal conditions for salmon, with minimal impact on the natural surroundings.

Please note that we do not guarantee that live abalone will be alive upon delivery. Also, live abalone is typically not in stock during lobster season, which runs each year from early October to mid-March.

Our live, farm-raised, small red abalone (Haliotis rufescens) are responsibly grown in abalone farms in Baja California. Live and raw abalone is used for awabi sushi or eaten as sashimi. It may also be served steamed, salted, boiled, chopped, or simmered in soy sauce. A true delicacy, abalone is popular for its chewy texture.

Typically you will receive 5-6 abalone per pound (in their shells). Once harvested from the farm, our red abalone are kept alive in tanks at our facility until they are shipped. They are packed with extra oxygen and proper insulation, so they arrive at your door fresh and ready to eat!
