    Wrong! The California Spiny Lobster COMMERCIAL Fishing season opened on Wednesday, October 1st with a price of $7 – $10/lb from fishermen to wholesalers.
    We have not paid lower than $9.00/lb to our fishermen and have the landing receipts with the Dept of Fish and Wildlife to prove it! 📜🧾

    🏢 What is a lobster wholesaler?

    Good question! Lobster wholesalers are companies (like Catalina) that go to the docks or have lobster delivered from local fishermen to us.
    We sell direct to other seafood companies both locally and globally 🌍.
    Luckily for our customers, we also just so happen to have a retail market that sells straight to the consumer! 🛒👨‍👩‍👧‍👦

    🚫🦞 WAIT! I thought China wasn’t buying lobsters this year?

    Incorrect! The market opened much lower due to Australia selling to China after 6 years of a trade disagreement.
    Australia started selling lobsters to China in December of 2024, so we have been planning for this all year.
    We have a solid relationship with our broker and our buyers in China and are thrilled they are still choosing to buy from Catalina. 🇨🇳🤝🇺🇸
    We also have a 20% tariff that gets passed to us — which Australia and Mexico (our 2 biggest export competitors) don’t have — but we continue to sell and at least break even on our overhead costs 💸.
    This week alone, Catalina Offshore shipped 2,500 lbs of lobsters to China ✈📦.

    💰 What are the overhead expenses for lobster season?

    🔧 Basic Requirements:

    Lobsters require a special kind of attention. Upon arrival, all lobsters are:

    • Measured,
    • Sorted for strength, missing legs, and overall health 🦞💪
    • Then placed in live tanks.

    Live tanks require daily chemical checks like:

    • Salinity 🌊
    • Nitrates
    • Nitrites
    • Ammonia

    This is done by Dillan Strangman, a UCSD graduate with a major in Biomechanical Engineering 🧪🎓.

    🇨🇳 China Shipping – Overhead of $5–$10/lb

    Once all levels are measured, we decide which tank to ship from to both Mainland China and Hong Kong.

    Lobster pack-outs require 24–48 hours of preplanning, including:

    • Health certificates 🧾
    • Proof of LEGAL purchase with CA Dept of Fish and Wildlife
    • Box prepping 📦
    • Broker communication
    • Buyer approval

    Then comes the crazy part, the pack out!

    • We drop tank temperature to make lobsters sleepy 😴
    • A crew of 8–10 people pulls, sorts, tallies, packages, ices, and stacks the lobsters
    • The driver heads off on a 6-hour roundtrip to LAX 🚚✈

    What do terms like Proton Frozen or IQF mean?

    Where do you ship?

    We ship within the United States, including Alaska and Hawaii. We do not ship to Puerto Rico, nor do we ship internationally.

      What is your shipping method?

      We ship via UPS Standard Overnight: Next Day-business delivery by 5 p.m. to U.S. businesses and by 8 p.m. to residences. Seafood is shipped in insulated packaging with ice packs and/or dry ice to withstand 24-48 hours in transit (depending on the final destination).       What is the cost of shipping?

      Unlike other online seafood retailers, we provide our customers with a competitive flat rate that does not increase based on weight. For additional details, please refer to our Shipping Information here.

      Do you offer free shipping?

      Yes. Orders over $200 shipping to California earn free shipping. Orders over $300 shipping elsewhere in the U.S. earn free shipping. For additional details, please refer to our Shipping Information here.

      When will I receive my order?

      You may select a delivery date up to three days out from your order, excluding blackout dates (Sundays, Mondays, and holidays). If you are unable to select a preferred delivery date at check out, it is due to one of the following reasons:

      • it is outside of the three-day window; 
      • it is a Sunday or Monday;
      • it is a holiday or the day after a holiday; 
      • your zip code does not qualify for Saturday delivery.
      Can my order arrive on a Saturday?

      Saturday delivery is an option for an additional charge; however, some zip codes do not allow for Saturday delivery. If your zip code falls into this category you will be notified with the option of canceling your order or choosing another delivery date.       How is my order packaged? How does it stay cold?

      Your seafood arrives in insulated packaging with gel ice packs and/or dry ice to withstand 24-48 hours in transit (depending on the final destination). Handle dry ice with care and avoid direct contact with skin. Feel free to reuse the gel packs! Dry ice is not permitted if shipping to Hawaii. 

      How long can my seafood sit on my porch and still stay cold / frozen?

      We pack your seafood with gel ice packs and/or dry ice to withstand 24-48 hours in transit but recommend transferring products to your refrigerator or freezer as soon as they arrive to maintain optimal quality. If you live in a hotter climate, we advise planning a delivery date when you know you will home or can get home shortly after tracking indicates your shipment has been delivered. 

      The packaging on my frozen product is cracked / unsealed. Is the product still safe to eat?

      We pack your seafood with gel ice packs and/or dry ice to withstand 24-48 hours in transit but recommend transferring products to your refrigerator or freezer as soon as they arrive to maintain optimal quality. If you live in a hotter climate, we advise planning a delivery date when you know you will home or can get home shortly after tracking indicates your shipment has been delivered. 

      Upon delivery, if you notice a fish portion has a broken vacuum seal and the fish appears in good condition, we suggest eating it as soon as possible. Alternatively you can repackage it by wrapping it tightly in saran wrap and storing in your freezer until you’re ready to enjoy. Unfortunately, we cannot issue refunds for broken vacuum seals after 48 hours upon delivery. See our return policy in our FAQ.

      Do I have to be home to get my package?

      You do not have to be home for delivery and signature is not required unless you require it. We do not assume responsibility for failed delivery attempts due to a lack of signature or lack of special instructions. For example, if you live in a gated apartment building and packages must be left in a designated area, it is your responsibility to include notes on your order.

      Is there a minimum purchase for online orders?

      We require a $50 minimum purchase for online orders. Unlike many online competitors, we do not require quantity minimums on individual items.

      Do I need an account to place an order?

      You may check out as a guest and do not need to set up an account. However, creating an account will help you check out faster in the future.

      What is the cut-time to place an order for next day delivery?

      Our cut-off time to place an order for next day delivery is 12PM PST.

      Can I modify my order after it is placed?

      It depends on availability of product and whether your original order has already been processed in our system. To request a modification to your order, please contact our online ordering department at help@catalinaop.com. 

      How do I track my order?

      Once your order has been shipped, you should receive an email with tracking info for your order. If you feel you placed your order successfully but did not receive tracking, please contact our online ordering department at help@catalinaop.com.

      What is your return policy?

      Due to the nature of the products we sell, we do not accept returns or provide exchanges. Once you take delivery of your shipment, it is your responsibility to properly store your seafood and/or consume it within recommend timeframes.

      Should you experience an issue with your order, we’ll do what we can to make it right with the following things in mind:

      Missing Items

      Upon delivery, be sure to check that all items were received. Look under all packing materials, including gel ice packs and smaller food items, to avoid accidentally discarding an item with your box. Missing items must be reported within 24 hours of delivery.

      Damaged Items
      To be considered for  refund, any damaged item must be reported with photos within 24 hours of delivery.
      Occasionally with frozen seafood items, the seal on a vacuum package can pop during transit.  This does not necessarily affect the quality of the fish nor does a popped seal automatically result in a refund. In most cases the fish is still perfectly frozen and safe to consume. Should you come across a broken seal, please contact us within 24 hours of delivery and we’ll help you assess the condition of the fish. After 24 hours we can no longer consider a broken vacuum seal a valid reason for refund. To avoid a vacuum seal breaking while being stored in your home freezer, be sure to handle frozen seafood with care.


      Fresh Seafood
      We recommend consuming fresh product within 1-2 days of receiving it. If for any reason you are dissatisfied with the quality of a fresh seafood item, please contact us within this time frame.


      Proton / Super Frozen Tuna
      Any issue with our frozen wild or farmed bluefin loin or toro, or wild ahi, must be reported within 7 days of delivery to be eligible for refund! Tuna naturally turns brown once exposed to air or when stored in a traditional freezer. Proton / Super freezing technology slows this process but does not prevent it. For best results, we recommend placing proton frozen tuna in the coldest part of your freezer and storing for no more than 5-7 days. (Find additional info in our FAQ under the “General” and “Sashimi, Sushi & Raw Shellfish” sections.) 


      Other frozen seafood and dry goods
      If for any reason you are dissatisfied with the quality of a frozen seafood item (excluding aforementioned Proton / Super frozen tuna) or dry good, please contact us within 15 days to be eligible for refund. 


      Shipping Considerations
      Although we ship overnight for next day delivery, transit delays may occur that are out of our control. It is for this reason that we ship our fresh and frozen products in insulated packaging with gel ice and/or dry ice to withstand 24-48 hours in transit (depending on the final destination). Sometimes products that were purchased and shipped frozen do not arrive solidly frozen. As long as they feel cold to the touch, slightly thawed sealed portions may be safely refrozen and consumed with no noticeable loss of quality or nutritional value. Requests for refunds on shipments that were delayed but delivered within 48 hours will be considered on a case-by-case basis. Orders delayed over 48 hours may be considered for reshipment or refund.

      What if there is an issue with my order?

      Please first review our return policy in our FAQ, then contact our online ordering department at help@catalinaop.com. To expedite resolution, include your order number, as many details as possible about your issue, and applicable photos or video.

      We do our best to respond to emails within the same business day or by the next. We are not in the office on Saturday or Sunday, therefore any inquiries emailed over a weekend will be responded to on the following Monday. 

      I am looking for a specific product, but do not see it on the site. Can you get it?

      Why are some products not available at times?

      Occasionally, you will find one or more of our seafood selections out of stock. This can be due to several factors including seasonal availability, weather conditions which can greatly impact availability, and/or demand exceeding supply.

      GENERAL SEAFOOD TIPS

      What should I do if my live sea urchin, lobster, spot prawns, etc. perish during transit?

      We ship our live products alive, but do not guarantee they will be alive upon delivery. 

      If a live urchin perishes during transit, it is still completely fresh and perfectly safe to enjoy within the same day. 

      Spot prawns that perish during transit will also be fresh and safe for raw consumption within the same day. However, once spot prawns are no longer alive, they begin to lose their ideal texture. If you are not able to consume your spot prawns the same day you receive them, we recommend boiling or pan searing them for later use. Be sure to cool first before storing in the refrigerator.

      Should your lobster appear to have perished in transit, we advise you to cook it the same day you receive it. To tell the difference between a dead lobster or one that is sluggish after being shipped, gently touch the lobster’s eye, and see if it moves. If your lobster is alive upon delivery, we recommend consuming it same day; however, it may keep in the refrigerator for one more day. Place on a baking tray and cover with a damp cloth. 

      My fish arrived partially thawed; can I refreeze it?

      We ship our frozen products in insulated packaging with gel ice and/or dry ice to withstand up to 48-hours transit. Sometimes products that were purchased frozen do not arrive solidly frozen. As long as they are cold to the touch, slightly thawed sealed portions may be safely refrozen with no perceptible loss of quality or nutritional value. 

      How should I cook my fish?

      A good rule of thumb when cooking in a pan or on the grill is to cook fish for 10 minutes per one inch of thickness. That’s about 4-5 minutes on one side and 4-5 on the other. 

      For sushi grade tuna, we recommend cooking about 1-2 minutes per side to keep a beautiful rare to medium-rare red center. 

      How long can I keep my fresh seafood before eating it?

      Fresh products should be refrigerated or frozen upon receipt. When stored properly in the refrigerator, fresh fish may be cooked within two days from date of purchase. If you do not intend to eat your fresh fish within a day or two, we recommend freezing it.

      Live shellfish should be consumed within 24 hours. In the meantime, store in your refrigerator on a baking tray or in a bowl covered with a damp cloth. (See our FAQ for more info on what to do if your live shellfish perishes during transit.) 

      How long can I keep my frozen seafood before eating it?

      With exception of our Proton frozen tuna, most of our frozen items may be stored in the coldest part of a traditional freezer for up to 6 months without sacrificing quality. Certain species, like tuna, naturally turn brown once exposed to air or if stored in a traditional freezer. Proton freezing technology slows this process but does not prevent it. For best results, Proton Frozen tuna should be placed in the coldest part of your freezer and stored for no more than 7 days.

      How should I properly defrost frozen fish and other seafood such as shrimp or scallops?

      The safest way to defrost your frozen fish is overnight in the refrigerator. 

      Alternatively, you can thaw it by removing from any packaging and placing it in a plastic bag in a large bowl of water that’s cooler than room temperature. Use a smaller bowl or a weighted plate to keep it submerged so that all parts defrost at the same rate. Using this method, most fish will thaw within 30 minutes. Pat dry with paper towels before cooking or serving raw (if sushi grade). 

      Once fully thawed, do not refreeze. Consume within 1-2 days of defrosting.

      Can I defrost seafood in the microwave?

      Please don’t use a microwave to defrost fish! Microwaving alters the texture of fish and shellfish and may partially cook it, further affecting its quality and flavor.

      SUSHI, SASHIMI & RAW SHELLFISH

      What does “sushi grade” mean?

      “Sushi grade” or “sashimi-grade” are common terms used to identify seafood considered “safe to consume raw.” Because there is no official, regulated standard for these terms, it’s important that you purchase sushi grade seafood from a trusted seafood source such as Catalina Offshore Products.

      Does sushi grade fish have to be frozen to be enjoyed raw?

      Generally, any wild fish except for tuna—bigeye, yellowfin, bluefin, etc—should be frozen for specific periods of time at specific temperatures to destroy parasites. Some farmed fish should also be frozen before consuming raw. 

      There are exceptions, including our farmed Mt. Cook SAIKOU Alpine Salmon, which is raised in parasite-free glacier water. To make it easy for you, our fresh or frozen products that are safe to be consumed raw are clearly specified as “sushi grade” and/or “sashimi grade” on product pages. 

      Is it okay to eat raw shellfish?

      Shellfish, including spot prawns and oysters, do not need to be frozen to be enjoyed raw. However, the FDA cautions that consuming any raw or undercooked seafood or shellfish may increase your risk of foodborne illness, especially if you have certain medical conditions.

      For best color, taste, and texture, how should I defrost my sushi grade tuna loin or toro?

      Tuna naturally turns brown when exposed to air (unless it has been gas-treated). To maintain its best color and texture, we recommend the following: 

      1. Grab a large bowl, salt, plastic food wrap and cheesecloth or kitchen paper (you may substitute paper towel, but it may stick to product).
      2. Fill bowl with lukewarm water and add salt at a rate of 2 teaspoons per liter of water. Remove tuna from any packaging and gently rinse with cold water then immerse in saltwater solution for 3-5 minutes, depending on size.
      3. Remove from saltwater and gently rinse with cold water. Gently remove excess moisture by wrapping tuna in cheesecloth or kitchen paper and then in plastic food wrap. 
      4. Use care to ensure the product is not wrapped too tightly as it is necessary to allow the product to “breathe” to achieve appropriate color. Plastic food wrap should not come in direct contact with the product. Refrigerate 3-5 hours, depending on size.
      5. Once tuna is fully thawed do not refreeze. Consume within 1-2 days of defrosting.

      Orders must be placed by 11AM PST for Next Day Delivery.

      Eligible orders may choose Next Day Delivery or other advance date within our 3-day window. We recommend choosing a delivery date at least one day before you plan to enjoy your seafood. This is especially true if you are shipping frozen items, as it will allow you enough time to properly defrost them.

      We ship overnight to deliver on Tuesdays, Wednesdays, Thursdays, Fridays, and Saturdays*. We do not deliver on Sundays, Mondays, holidays, or the day following a holiday.

      Please note that that many rural zip codes do not accept Saturday delivery. We will notify you if we are unable to complete your order due to this reason.

      Saturday Delivery

      Delivery Delays and Second Delivery Attempts

      Due to such things as inclement weather affecting transit hubs or destination points, or challenges related to current events (such as the pandemic), UPS cannot guarantee a specific delivery time. Some overnight shipments will be delivered earlier in the day while others may be delivered in the evening.

      If you require a signature or security check (i.e. gated entry) and are not present at time of delivery, UPS may not make a second delivery attempt. Should your delivery be unsuccessful due to requirement of a signature, we will be unable to provide a refund.

      Be advised that any order over $500 requires a signature upon delivery. If you are unable to be present at the time of delivery, it is your responsibility to make alternate arrangements (i.e. make sure someone is home, have your shipment delivered to a neighbor, etc.). Should your delivery be unsuccessful due to requirement of a signature, we will be unable to provide a refund.

      NOAA scientists are working collaboratively with Catalina Offshore Products to collect the information needed to understand the opah’s behavior, diet, age, growth, and reproduction. These data will allow NOAA to develop management strategies for this little known fish, as there is currently not enough information to conduct a stock assessment.

      This work would not be possible without the collaborative support of fishermen and the seafood industry for regular access to San Diego caught opah for sampling.

      Meet the Scientists

      Matthew Craig, PhD

      Matt Craig is a research scientist at the Southwest Fisheries Science Center. He earned is Ph.D. from Scripps Institution of Oceanography in 2005. After his post-doctoral work at the Hawaii Institute of Marine Biology, Matt served as Associate Professor at the University of Puerto Rico, followed by a post as a Visiting Scientist at the J. Craig Venter Institute prior to his NMFS service. Matt’s research focuses on the systematics, conservation, and management of marine fishes.


      Heidi Dewar, PhD

      Heidi Dewar is a fisheries research biologist in the Life History Program at the Southwest Fisheries Science Center. She completed her Ph.D. at Scripps Institution of Oceanography in 1993 where she worked on the physiology of tropical tunas. She has since worked in a range of disciplines and species and has worked closely with fishers. Her overarching scientific interest is in how the interplay between physiology and the environment determine the movements and behaviors of fish. She currently works with a range of highly migratory species collecting biological data to support management, specializing in species like sharks, tunas, opah, and billfish.


      Mark Helvey

      Mark Helvey had a 30-year career with NOAA’s National Marine Fisheries Service (NMFS), covering fishery, natural resource damage, and habitat programs. He served as the last Assistant Regional Administrator for Sustainable Fisheries with the NMFS Southwest Region, representing the agency on highly migratory and coastal pelagic species. He participated as a member of U.S. delegations to the Inter-American Tropical Tuna Commission, the Western-Central Pacific Fisheries Commission, the Northern Committee, the International Scientific Committee, and the U.S.-Canada Albacore Treaty.

      Prior to joining NMFS in 1985, Helvey was a research associate at Occidental College where he examined fish interactions with southern California offshore water intake structures. He holds both a Bachelor of Science and Master of Science from the University of California, Santa Barbara and the University of Arizona, respectively, and a Master’s in Business Administration California State University, Long Beach. His present interests revolve around seeking sustainable fishing opportunities for U.S. harvesters and producers.


      John Hyde, PhD

      Dr. John Hyde leads the Genetics, Physiology, and Aquaculture Program for the Fisheries Resources Division at NOAA’s Southwest Fisheries Science Center. Over the course of his career he has led research on sharks, billfish, rockfish, sardine, opah, yellowtail and abalone and participated in research on marine mammals and marine turtles. Much of his work focuses on improving management decisions by identifying units to manage, understanding how species are affected by their environment, and developing tools to monitor the health and vital rates of wild and cultured species.

      John received his PhD from the Scripps Institution of Oceanography and has been actively involved with marine biology research in southern California for 20 years. In addition to his research experience, he has been an avid boater, scuba diver and fisherman his whole life.


      Sarah Mesnick, PhD 

      Sarah Mesnick leads efforts at NOAA Fisheries Southwest Fisheries Science Center to engage scientists, fishermen, buyers, chefs and consumers in finding creative – and culinary – solutions to conserving and sustaining our fish, fisheries and local fishing communities. As a behavioral ecologist by training, Sarah is also engaged with Heidi Dewar and Hawaii Pacific University in a project to better understand the unusual pattern of sexual dimorphism in opah.


      Oriana Poindexter

      Oriana Poindexter earned her master’s degree from the Scripps Institution of Oceanography and has been based at the NOAA Southwest Fisheries Science Center since 2015. Her focus is the seafood supply chain on a local and global scale, and she works directly with fishermen, chefs, industry and seafood consumers to foster collaborative, creative solutions. She has been collecting biological samples from opah processed at Catalina Offshore Products to inform NOAA’s ongoing research on the opah species complex.


      Owyn Snodgrass

      Owyn Snodgrass was born and raised in San Diego in a diving, fishing, and surfing family. After graduating with a degree in Marine Biology from UCSC, he returned to San Diego to pursue a career in fisheries science. Since joining the NOAA Southwest Fisheries Science Center, he has worked on several species of fisheries interest including Pacific bluefin tuna, opah, and numerous shark species.


      Nick Wegner, PhD

      Nick grew up fishing in lakes and streams in Connecticut and Illinois, before attending the University of California, San Diego (where he graduated with a BS in Biology in 2004) and Scripps Institution of Oceanography (where he completed a PhD in Marine Biology). Nick has been working at the NOAA SWFSC since 2012, where his research focuses on understanding the physiology and ecology of commercially important fish species. He recently led a study examining the unique ability of opah to circulate warm blood throughout their body, and now is working with a team to tag opah with temperature sensors to examine how having a warm body effects their distribution, movements and behavior.
