🍶 Discover the World of Japanese Sake & Pair It Like a Pro with Fresh Seafood

Japan’s iconic rice wine, sake, is a drink steeped in tradition, craftsmanship, and delicate complexity. Whether you’re new to sake or a connoisseur, understanding the varieties of sake and how they pair with food — especially fresh seafood — can elevate your culinary experience.

In this guide, we’ll explore the types of sake we carry, what makes each one unique, and how to pair them like a seasoned sommelier.

🏮 What Are the Main Types of Sake?

Sake is brewed with just four ingredients — rice, water, yeast, and koji mold — but the polishing ratio of the rice and fermentation techniques give birth to diverse styles and flavor profiles, including:

  • Honjozo: Light, crisp, and slightly dry with added distilled alcohol to enhance aroma.
  • Junmai: Pure rice sake — no added alcohol, with a richer, fuller body.
  • Junmai Ginjo & Daiginjo: Premium sakes with highly polished rice, often aromatic, smooth, and refined.
  • Nigori: Unfiltered, milky sake with a sweet, creamy texture.
  • Yamahai: Earthier, more umami-rich style using a traditional fermentation starter.

🍶 Featured Sakes We Carry (With Pairings & Tasting Notes)

1. Sakuragawa Dry Honjozo

  • Type: Honjozo
  • Flavor: Crisp, clean, and dry with subtle grainy notes and hints of umami.
  • Aroma: Light rice aroma, faintly herbal.
  • Pairing: Excellent with grilled white fish, shrimp tempura, or sashimi. Its dryness cuts through rich seafood oils effortlessly.

2. Tsuji Zenbei Junmai with Wine Yeast

  • Type: Junmai (brewed with wine yeast)
  • Flavor: Unique fusion — rich umami from the rice with fruity wine-like acidity.
  • Aroma: Floral with grape and pear notes.
  • Pairing: Fantastic with shellfish like scallops or oysters. The acidity balances the brininess beautifully.

3. Shuho Junmai Daiginjo Cho-Karakuchi

  • Type: Junmai Daiginjo (Extra Dry)
  • Flavor: Exceptionally smooth, light, and extremely dry with subtle fruity tones.
  • Aroma: Elegant, slightly fruity with melon and apple hints.
  • Pairing: A refined match for fatty tuna, squid, or uni (sea urchin). Its dry finish enhances rich, creamy textures.

4. Nigori No Jozen Junmai Ginjo

  • Type: Nigori / Junmai Ginjo
  • Flavor: Creamy and slightly sweet with hints of coconut, banana, and floral rice.
  • Aroma: Lush, tropical, and inviting.
  • Pairing: Ideal for spicy seafood rolls, eel, or spicy tuna. The sweetness softens spicy flavors and complements savory glazes.

5. Sawahime Yamahai Junmai

  • Type: Yamahai Junmai
  • Flavor: Full-bodied, umami-rich with a slightly aged, earthy depth.
  • Aroma: Earth, mushroom, fermented rice.
  • Pairing: Best with grilled mackerel, black cod, or shellfish in miso broth. Its boldness stands up to stronger flavors.

6. Kira Kira Jozen Mizuno Gotoshi

  • Type: Junmai Ginjo
  • Flavor: Delicate and balanced with gentle fruity notes and soft umami.
  • Aroma: Apple, lychee, and a whisper of jasmine.
  • Pairing: Great with sushi platters, sea bream, or citrusy ceviche. Its elegance enhances freshness without overpowering.

🌊 Sake Pairing Tips for Seafood Lovers

  • 🍣 Match intensity: Light sake with light fish, bold sake with grilled or oily seafood.
  • 🔥 Balance spice: Use sweeter sakes like Nigori to mellow spicy seafood.
  • 🍋 Add contrast: Dry sakes cut through oily textures and reset the palate.

Frequently Asked Questions https://catalinaop.com/faqs/ Wed, 13 Aug 2025 06:27:41 +0000 https://catalinaop.com/?page_id=470618 GENERAL
Why does the price differ online vs the retail fish market?

Online-Only Pricing Notice. Prices listed on catalinaop.com apply to online orders only and may differ from retail prices at our physical San Diego fish market. Online pricing reflects the added costs involved in nationwide seafood delivery — including insulated packaging, dry ice or gel packs, shipping carrier fees, insurance, and overall logistics to maintain food safety and quality during transit. In-store purchases do not include these shipping-related expenses. For current in-store prices, please call or visit our market.

What kind of seafood do you sell?

We’re strategically situated between San Diego’s local waterfront and Baja California. This enables us to provide you with a variety of wild caught and farmed seafood from the Pacific West Coast, the Pacific side of the Baja peninsula and the Gulf of California. Our ever-evolving bounty of fresh and frozen seafood includes tuna, opah, swordfish, grouper, yellowtail, halibut, snapper, sea bass, rockfish, sea urchin, shrimp, spot prawns, spiny lobster, abalone, and much more!

Why do you sell farmed fish?

More than three billion people depend on seafood as their primary source of protein. Wild-capture seafood harvests have leveled off and cannot meet the growing seafood demand alone. Consumer demand for healthy fish AND sustainable practices has resulted in many delicious, environmentally responsible farmed seafood choices, including several selections we offer.

What do terms like Proton Frozen or IQF mean?

The faster you freeze your food the better the quality. When food is frozen slowly, ice crystals form. Big ice crystals typically dry out the food and impact the overall taste and flavor.

Proton freezing is a more recent quick-freeze technology that combines evenly distributed electromagnetic waves and cold air to reduce ice crystal formation and cell membrane damage. As a result, taste and texture are preserved naturally, without any additives or chemicals.

IQF, or individually quick frozen, is a common freezing method in the foodservice industry and consists of freezing individual pieces of food separately from the other pieces at extremely low temperatures. IQF is also referred to as flash freezing, quick freeze, or super freeze.

Where are you located?

We are located in the famed coastal town of San Diego, CA, otherwise known as America’s Finest City!

Do you have a physical storefront?

Yes! In addition to our online store, we have a walk-in fish market:

  • 5202 Lovelock Street, San Diego, CA, 92110
  • Open Tuesday-Friday 10AM-5PM and Saturday and Sunday 10AM-3PM
  • For changes to our operating hours due to holidays or other factors please refer to Google, Yelp, or our other social platforms.

Unlike other online seafood retailers, we provide our customers with a competitive flat rate that does not increase based on weight. For additional details, please refer to our Shipping Information here.

When will I receive my order?

You may select a delivery date up to three days out from your order, excluding blackout dates (Sundays, Mondays, and holidays). If you are unable to select a preferred delivery date at check out, it is due to one of the following reasons:

    • it is outside of the three-day window;
    • it is a Sunday or Monday;
    • it is a holiday or the day after a holiday;
    • your zip code does not qualify for Saturday delivery.
Can my order arrive on a Saturday?

Saturday delivery is an option for an additional charge; however, some zip codes do not allow for Saturday delivery. If your zip code falls into this category you will be notified with the option of canceling your order or choosing another delivery date. For additional details, please refer to our Shipping Information here.

How is my order packaged? How does it stay cold?

Your seafood arrives in insulated packaging with gel ice packs and/or dry ice to withstand 24-48 hours in transit (depending on the final destination). Handle dry ice with care and avoid direct contact with skin. Feel free to reuse the gel packs! Dry ice is not permitted if shipping to Hawaii.

How long can my seafood sit on my porch and still stay cold / frozen?

We pack your seafood with gel ice packs and/or dry ice to withstand 24-48 hours in transit but recommend transferring products to your refrigerator or freezer as soon as they arrive to maintain optimal quality. If you live in a hotter climate, we advise planning a delivery date when you know you will home or can get home shortly after tracking indicates your shipment has been delivered.

The packaging on my frozen product is cracked / unsealed. Is the product still safe to eat?

We pack your seafood with gel ice packs and/or dry ice to withstand 24-48 hours in transit but recommend transferring products to your refrigerator or freezer as soon as they arrive to maintain optimal quality. If you live in a hotter climate, we advise planning a delivery date when you know you will home or can get home shortly after tracking indicates your shipment has been delivered.

Upon delivery, if you notice a fish portion has a broken vacuum seal and the fish appears in good condition, we suggest eating it as soon as possible. Alternatively you can repackage it by wrapping it tightly in saran wrap and storing in your freezer until you’re ready to enjoy. Unfortunately, we cannot issue refunds for broken vacuum seals after 48 hours upon delivery. See our return policy in our FAQ.

Do I have to be home to get my package?

You do not have to be home for delivery and signature is not required unless you require it. We do not assume responsibility for failed delivery attempts due to a lack of signature or lack of special instructions. For example, if you live in a gated apartment building and packages must be left in a designated area, it is your responsibility to include notes on your order.

    Shipping Information:

Is there a minimum purchase for online orders?

We require a $50 minimum purchase for online orders. Unlike many online competitors, we do not require quantity minimums on individual items.

Do I need an account to place an order?

You may check out as a guest and do not need to set up an account. However, creating an account will help you check out faster in the future.

What is the cut-time to place an order for next day delivery?

Our cut-off time to place an order for next day delivery is 12PM PST.

Can I modify my order after it is placed?

It depends on availability of product and whether your original order has already been processed in our system. To request a modification to your order, please contact our online ordering department at help@catalinaop.com.

How do I track my order?

Once your order has been shipped, you should receive an email with tracking info for your order. If you feel you placed your order successfully but did not receive tracking, please contact our online ordering department at help@catalinaop.com.

    What is your return policy?

Due to the nature of the products we sell, we do not accept returns or provide exchanges. Once you take delivery of your shipment, it is your responsibility to properly store your seafood and/or consume it within recommend timeframes.

Should you experience an issue with your order, we’ll do what we can to make it right with the following things in mind:

    Missing Items

Upon delivery, be sure to check that all items were received. Look under all packing materials, including gel ice packs and smaller food items, to avoid accidentally discarding an item with your box. Missing items must be reported within 24 hours of delivery.

    Damaged Items
To be considered for refund, any damaged item must be reported with photos within 24 hours of delivery.
Occasionally with frozen seafood items, the seal on a vacuum package can pop during transit. This does not necessarily affect the quality of the fish nor does a popped seal automatically result in a refund. In most cases the fish is still perfectly frozen and safe to consume. Should you come across a broken seal, please contact us within 24 hours of delivery and we’ll help you assess the condition of the fish. After 24 hours we can no longer consider a broken vacuum seal a valid reason for refund. To avoid a vacuum seal breaking while being stored in your home freezer, be sure to handle frozen seafood with care.

    Fresh Seafood
We recommend consuming fresh product within 1-2 days of receiving it. If for any reason you are dissatisfied with the quality of a fresh seafood item, please contact us within this time frame.

    Proton / Super Frozen Tuna
Any issue with our frozen wild or farmed bluefin loin or toro, or wild ahi, must be reported within 7 days of delivery to be eligible for refund! Tuna naturally turns brown once exposed to air or when stored in a traditional freezer. Proton / Super freezing technology slows this process but does not prevent it. For best results, we recommend placing proton frozen tuna in the coldest part of your freezer and storing for no more than 5-7 days. (Find additional info in our FAQ under the “General” and “Sashimi, Sushi & Raw Shellfish” sections.)

Other frozen seafood and dry goods
If for any reason you are dissatisfied with the quality of a frozen seafood item (excluding aforementioned Proton / Super frozen tuna) or dry good, please contact us within 15 days to be eligible for refund.

    Shipping Considerations
Although we ship overnight for next day delivery, transit delays may occur that are out of our control. It is for this reason that we ship our fresh and frozen products in insulated packaging with gel ice and/or dry ice to withstand 24-48 hours in transit (depending on the final destination). Sometimes products that were purchased and shipped frozen do not arrive solidly frozen. As long as they feel cold to the touch, slightly thawed sealed portions may be safely refrozen and consumed with no noticeable loss of quality or nutritional value. Requests for refunds on shipments that were delayed but delivered within 48 hours will be considered on a case-by-case basis. Orders delayed over 48 hours may be considered for reshipment or refund.

UPS and Catalina Offshore assume no liability for loss, damage, delay, misdelivery or nondelivery due to causes beyond either party’s reasonable control (aka “Acts of God”)

What if there is an issue with my order?

Please first review our return policy in our FAQ, then contact our online ordering department at help@catalinaop.com. To expedite resolution, include your order number, as many details as possible about your issue, and applicable photos or video.

We do our best to respond to emails within the same business day or by the next. We are not in the office on Saturday or Sunday, therefore any inquiries emailed over a weekend will be responded to on the following Monday.

I am looking for a specific product, but do not see it on the site. Can you get it?

We’re always open to suggestions for new products and happy to answer questions about out-of-stock or previously cataloged products! Feel free to contact us at help@catalinaop.com.

Why are some products not available at times?

Occasionally, you will find one or more of our seafood selections out of stock. This can be due to several factors including seasonal availability, weather conditions which can greatly impact availability, and/or demand exceeding supply.

Can I send an order as a gift?

Of course! When you check out, update the shipping address with your recipient’s address.

Not sure what type of fish they like? A Catalina Offshore Products Gift Card makes the perfect gift for your seafoodie! Simply choose a dollar amount, add your message, and a digital Gift Card will be emailed directly to your recipient for easy ordering anytime.

    GENERAL SEAFOOD TIPS

What should I do if my live sea urchin, lobster, spot prawns, etc. perish during transit?

We ship our live products alive, but do not guarantee they will be alive upon delivery.

If a live urchin perishes during transit, it is still completely fresh and perfectly safe to enjoy within the same day.

Spot prawns that perish during transit will also be fresh and safe for raw consumption within the same day. However, once spot prawns are no longer alive, they begin to lose their ideal texture. If you are not able to consume your spot prawns the same day you receive them, we recommend boiling or pan searing them for later use. Be sure to cool first before storing in the refrigerator.

Should your lobster appear to have perished in transit, we advise you to cook it the same day you receive it. To tell the difference between a dead lobster or one that is sluggish after being shipped, gently touch the lobster’s eye, and see if it moves. If your lobster is alive upon delivery, we recommend consuming it same day; however, it may keep in the refrigerator for one more day. Place on a baking tray and cover with a damp cloth.

My fish arrived partially thawed; can I refreeze it?

We ship our frozen products in insulated packaging with gel ice and/or dry ice to withstand up to 48-hours transit. Sometimes products that were purchased frozen do not arrive solidly frozen. As long as they are cold to the touch, slightly thawed sealed portions may be safely refrozen with no perceptible loss of quality or nutritional value.

How should I cook my fish?

A good rule of thumb when cooking in a pan or on the grill is to cook fish for 10 minutes per one inch of thickness. That’s about 4-5 minutes on one side and 4-5 on the other.

For sushi grade tuna, we recommend cooking about 1-2 minutes per side to keep a beautiful rare to medium-rare red center.

How long can I keep my fresh seafood before eating it?

Fresh products should be refrigerated or frozen upon receipt. When stored properly in the refrigerator, fresh fish may be cooked within two days from date of purchase. If you do not intend to eat your fresh fish within a day or two, we recommend freezing it.

Live shellfish should be consumed within 24 hours. In the meantime, store in your refrigerator on a baking tray or in a bowl covered with a damp cloth. (See our FAQ for more info on what to do if your live shellfish perishes during transit.)

How long can I keep my frozen seafood before eating it?

With exception of our Proton frozen tuna, most of our frozen items may be stored in the coldest part of a traditional freezer for up to 6 months without sacrificing quality. Certain species, like tuna, naturally turn brown once exposed to air or if stored in a traditional freezer. Proton freezing technology slows this process but does not prevent it. For best results, Proton Frozen tuna should be placed in the coldest part of your freezer and stored for no more than 7 days.

How should I properly defrost frozen fish and other seafood such as shrimp or scallops?

The safest way to defrost your frozen fish is overnight in the refrigerator.

Alternatively, you can thaw it by removing from any packaging and placing it in a plastic bag in a large bowl of water that’s cooler than room temperature. Use a smaller bowl or a weighted plate to keep it submerged so that all parts defrost at the same rate. Using this method, most fish will thaw within 30 minutes. Pat dry with paper towels before cooking or serving raw (if sushi grade).

Once fully thawed, do not refreeze. Consume within 1-2 days of defrosting.

Can I defrost seafood in the microwave?

Please don’t use a microwave to defrost fish! Microwaving alters the texture of fish and shellfish and may partially cook it, further affecting its quality and flavor.

    SUSHI, SASHIMI & RAW SHELLFISH

    What does “sushi grade” mean?

“Sushi grade” or “sashimi-grade” are common terms used to identify seafood considered “safe to consume raw.” Because there is no official, regulated standard for these terms, it’s important that you purchase sushi grade seafood from a trusted seafood source such as Catalina Offshore Products.

Does sushi grade fish have to be frozen to be enjoyed raw?

Generally, any wild fish except for tuna—bigeye, yellowfin, bluefin, etc—should be frozen for specific periods of time at specific temperatures to destroy parasites. Some farmed fish should also be frozen before consuming raw.

There are exceptions, including our farmed Mt. Cook SAIKOU Alpine Salmon, which is raised in parasite-free glacier water. To make it easy for you, our fresh or frozen products that are safe to be consumed raw are clearly specified as “sushi grade” and/or “sashimi grade” on product pages.

Is it okay to eat raw shellfish?

Shellfish, including spot prawns and oysters, do not need to be frozen to be enjoyed raw. However, the FDA cautions that consuming any raw or undercooked seafood or shellfish may increase your risk of foodborne illness, especially if you have certain medical conditions.

For best color, taste, and texture, how should I defrost my sushi grade tuna loin or toro?

Tuna naturally turns brown when exposed to air (unless it has been gas-treated). To maintain its best color and texture, we recommend the following:

    1. Grab a large bowl, salt, plastic food wrap and cheesecloth or kitchen paper (you may substitute paper towel, but it may stick to product).
    2. Fill bowl with lukewarm water and add salt at a rate of 2 teaspoons per liter of water. Remove tuna from any packaging and gently rinse with cold water then immerse in saltwater solution for 3-5 minutes, depending on size.
    3. Remove from saltwater and gently rinse with cold water. Gently remove excess moisture by wrapping tuna in cheesecloth or kitchen paper and then in plastic food wrap.
    4. Use care to ensure the product is not wrapped too tightly as it is necessary to allow the product to “breathe” to achieve appropriate color. Plastic food wrap should not come in direct contact with the product. Refrigerate 3-5 hours, depending on size.
    5. Once tuna is fully thawed do not refreeze. Consume within 1-2 days of defrosting.

  • Sushi Grade
  • Proton Frozen
  • Subtle, non-fishy taste and aroma, medium fat content
  • Enjoy raw as sashimi, shiro maguro sushi, or cook by grilling or pan searing
  • Size: 1 lb]]>
Albacore (Thunnus alaunga) is the only tuna species which may be marketed as “white meat tuna” in the U.S. When prepared for sushi, it is known as shiro maguro.

Generally, albacore offers a rich yet mild flavor profile and desirable texture that’s firm like other tunas but less so than Ahi. Caught off the coast of Southern California, our local albacore are less fatty than cold water Pacific Northwest albacore. Flavor and texture-wise, they fall somewhere between Pacific Northwest albacore and albacore found throughout the South Pacific, which is leaner and more commonly referred to as tombo.

Depending on fat content, the color of our local catch ranges from a whitish pink-peach to deeper pinkish-red. Suitable for a variety of preparation methods both cooked and raw, it’s an excellent choice for sushi, crudo, confit or searing in a skillet or on the grill.

    Sustainability

U.S. wild-caught Pacific albacore tuna is considered by NOAA to be a smart seafood choice because it is sustainably managed and responsibly harvested under U.S. regulations.

    • Ahi or Bluefin (3 lbs) wild caught, sushi / sear grade*
    • White fish (4 lbs), wild caught (not sushi grade) **

    * If planning to enjoy some of your tuna raw as sashimi, sushi, or poke, we recommend doing so within a week. In Japan the term saku means block. Saku is commonly served as maguro in sushi bars. Because of its uniformity, yellowfin saku is often preferred by Japanese chefs for sashimi and other sliced presentations.

Ideal for making ahi sushi or for pan searing, our premium yellowfin saku is boneless and skinless with blood line removed. It has been super-frozen at -40 degrees Celsius in under an hour to eliminate deterioration of the cells in the meat. The result is a noticeably firmer texture. It has also been treated with carbon monoxide (CO) for color enhancement.

This wild product originates in Asia and is provided by Krimson, a brand known by chefs for consistent quality and exact portions. Frozen/vacuum packed pieces are approximately 10 oz each.

Albacore (Thunnus alaunga) is the only tuna species which may be marketed as “white meat tuna” in the U.S. When prepared for sushi, it is known as shiro maguro.

Albacore offers a rich yet mild flavor profile and desirable texture that’s firm like other tunas but less so than Ahi. Harvested from the cold waters of the Pacific Northwest, this albacore boasts a higher fat content than Ahi or our local albacore/tombo. Its richer taste and melt-in-your mouth texture that makes it an excellent less expensive alternative to bluefin toro.

Suitable for a variety of preparation methods both cooked and raw, this catch is idea for sashimi, sushi, crudo, confit or searing in a skillet or on the grill. When cooked, its pink meat turns white and provides dense texture with large, moist flakes.

Please note that this product is sold by the piece and each piece is approximately 1.1 lbs.

    The Fishery

Our sashimi grade albacore is harvested from the U.S. Northern Pacific at “the cold-water edge,” where the warm tropical water meets cold arctic currents. “Surface Catch” out of these areas produces some of the highest oil content albacore tuna in the world. Fish are brought aboard the vessel live, immediately bled and Frozen at Sea (FAS) by being placed in blast freezers within minutes of being caught. In the blast, heat is quickly extracted, and the core temperature of the whole fish is pulled down to a minimum of – 20° F. Stringent handling and rapid freezing guarantee this product is of the highest sashimi-grade quality.

    Sustainability

This particular sashimi grade Pacific albacore is certified to the MSC Fisheries Standard, a science-based set of requirements for sustainable fishing.

    Big Eye Poke Chunks https://catalinaop.com/product/big-eye-poke-chunks/ Thu, 10 Jul 2025 15:28:29 +0000 http://localhost:8888/catalinaop/?post_type=product&p=466207
  • Sushi Grade
  • Proton Frozen
  • Mild flavor and firm texture
  • Use for poke, sushi rolls or a quick tuna stir-fry
  • Size: 1 lb]]>
Poke, which means “to cut into pieces,” is as culturally significant to Hawaii as hamburgers are to the mainland. Dating back to the islands’ first Polynesian settlers, the dish combined chunks of reef fish, seaweed, kukui nuts and salt. As modern fishing techniques emerged, Ahi replaced reef fish and today remains the preference for most variations of poke.

Our proton-frozen poke chunks originate from U.S. wild-caught Pacific bigeye and yellowfin, both known as Ahi. They offer firm texture, mild flavor and well-balanced fat content. Depending on the size of the fish, flesh color may range from pink to deep cherry red. Hand cut in house, our poke chunks are irregular-shaped portions that we vacuum seal and proton freeze in 1-lb packs. They are ideal for poke as well as tuna stacks, tuna tartare, ceviche, seafood salads and more – just cut them to the size you prefer!

    What is Proton-Frozen?

Proton-freezing is a quick-freeze technology that combines evenly distributed electromagnetic waves and cold air to reduce ice crystal formation and cell membrane damage. As a result, taste and texture are preserved naturally, without any additives or chemicals. Color is also comparable to fresh if fish is properly stored and defrosted*.

*Certain species, like tuna, naturally turn brown once exposed to air or if stored in a traditional freezer. Proton freezing technology slows this process but does not prevent it. For best results, we recommend placing proton frozen tuna in the coldest part of your freezer and storing for no more than 7 days. When ready to eat, slowly defrost in refrigerator and consume within same 24 hours.

    The Fisheries

We receive much of our wild bigeye and yellowfin from U.S. vessels that fish the Eastern Pacific between California and Hawaii. Both species in this region are considered a Smart Seafood Choice by NOAA and rated a Good Alternative by Seafood Watch due to being sustainably managed and responsibly harvested under the strictest U.S. regulations. We also receive yellowfin from the Eastern Pacific off Central America. Yellowfin in this region are managed by the Inter-American Tropical Tuna Commission (IATTC), the governing body responsible for the conservation and management of tuna and other marine resources in the eastern Pacific Ocean. Additionally we receive yellowfin tuna from the Central Pacific off Tahiti.

    Did You Know?

In the Hawaiian language, both yellowfin and bigeye are also known as ahi. The term translates to “fire” and originates from a time when the islanders harvested yellowfin from outrigger canoes. The handlines would go over the edge of the boats so fast that they smoked and left burn marks. There is a difference in the flavor between the two species, but it’s so slight that most people can’t taste it.
