Averaging around 100 pounds and 3 feet long when they land at the docks, these fish are silver with pink scales, white spots, red mouths and fins, and large, gold-rimmed eyes.<br><br><\/p>\n\n\n\n<p class=\"mb-4 has-small-font-size wp-block-paragraph\">Opah are the&nbsp;<a href=\"https:\/\/web.archive.org\/web\/20250623023207\/https:\/\/science.sciencemag.org\/content\/348\/6236\/786\" target=\"_blank\" rel=\"noreferrer noopener\">first fish discovered to have a warm heart<\/a>, meaning they can circulate heated blood throughout their body. This physiological adaptation&nbsp;and their habit of using their pectoral fins to swim rather than their tail is linked to a culinary distinction \u2013 creating one fish with many types of meat.
