Courtesy Davin Waite of Wrench &amp; Rodent Seabasstropub.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients:<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Opah Bacon:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>5 lbs opah belly<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>3 cups green tea<\/li><li>1 tsp curing salt<\/li><li>2 tsp black peppercorns<\/li><li>1 tsp pink peppercorns<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>2 cups brown sugar<\/li><li>1\/8 salt<\/li><li>1\/4 cup crushed black pepper<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Seaweed Green Goddess Sauce:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>6 sheets roasted nori<\/li><li>4 oz sushi vinegar<\/li><li>2 oz sesame oil<\/li><li>4 oz water<\/li><li>2 egg yolks<\/li><li>5 oz blended oil<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">BLT<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Toasted slider buns<\/li><li>Opah bacon<\/li><li>Tomato<\/li><li>Lettuce<\/li><li>Goddess Sauce<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">How to Prepare:<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>You will first need to make the opah bacon. In a large bowl, make brine by combining green tea, curing salt, and black and pink peppercorns. Cut opah belly into strips roughly 1 inch by 1\/2 inch (maximizing surface area to absorb smoke). Place in brine and leave overnight.<\/li><li>Strain brine and retain the pieces of opah. Make your rub by combining brown sugar, salt and crushed black pepper. Toss opah in rub to coat.<\/li><li>Place on smoker for roughly 2 hours at 180 degrees.<\/li><li>To make the goddess sauce, to a blender add nori sheets, sushi vinegar, and toasted sesame. Turn on blender to medium speed, add in egg yolks, followed by both oils drizzling them one at a time. After all the oil has been incorporated, add in some water to thin it out.<\/li><li>Build your BLT by spreading a bit of dressing on the bottom bun, then layering up with lettuce, tomato and a piece of opah bacon, followed by more green goddess and the top bun.
